Method
Toro Tartare
Prepare toro
Keep the toro very cold. Trim any sinew and blot dry with paper towels. Using a very sharp knife, cut the toro into small even dice (about 3–4 mm). Place diced toro in a chilled bowl and keep refrigerated while you prepare the rest.
Season: sprinkle the sea salt and freshly ground black pepper over the mixture. Fold gently, taste a small piece, and adjust salt if necessary. Return to the refrigerator while you make the truffle ponzu and bubu arare.
Truffle Ponzu
Make dressing
In a small bowl, whisk together the ponzu sauce, white soy sauce, sesame oil, truffle oil, yuzu (or lemon) juice and grated ginger until smooth and balanced. Taste and adjust: it should be bright and slightly salty with a subtle truffle aroma. If too intense, add a few drops of water.
Reserve: set aside 1/2 tablespoon of the dressing per serving to finish the tartare at plating. Keep remainder refrigerated for service.
Bubu Arare Crunch
Prepare crunch
In a small bowl, gently crush the bubu arare slightly with the back of a spoon or in a small zip bag — you want mostly small pieces and some powder but not dust. Mix the crushed arare with the toasted sesame seeds and optional grated bonito flakes. Keep dry and at room temperature so the crunch remains crisp.
Finishing & Service
Assemble tasting portions
Portion the tartare into 4 equal tasting servings (approx. 2 oz / 60 g each). Use a ring mold (2–2.5 in / 5–6 cm) on chilled plates for neat presentation: place the mold, spoon 2 oz of the toro tartare into it, press gently for shape, then lift the mold.
Dress and finish: drizzle about 1/2 tablespoon of the truffle ponzu over each portion, then very lightly drizzle a few drops (about 1/8 tsp) of extra-virgin olive oil. Sprinkle a teaspoon of the bubu arare crunch across the top and around the base for texture. Add a pinch of lemon zest if using and a few microgreens or a single shiso leaf or toasted nori strip for contrast.
Serve immediately: present on chilled small plates as a tasting/sashimi course so the toro remains cool and the arare stays crisp. Provide a small tasting spoon or chopsticks. Leftovers should be refrigerated and consumed within 24 hours; do not refreeze.
