Cooking the Rice

    Prepare the Purple Jasmine Rice

    Rinse the purple jasmine rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and 2 cups of water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Sautéing the Vegetables

    Sauté the Seasonal Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add sliced bell pepper, carrot, zucchini, and broccoli florets. Season with 1 teaspoon of salt and 1 teaspoon of black pepper. Sauté for about 5-7 minutes or until the vegetables are tender but still crisp.

Preparing the Protein

    Cook the Tofu

    In the same skillet, push the vegetables to one side and add cubed tofu. Drizzle with 3 tablespoons of soy sauce. Cook for 5-7 minutes, turning occasionally until the tofu is golden brown and heated through.

Assembling the Bowl

    In serving bowls, start with a base of the cooked purple jasmine rice. Top with sautéed vegetables and crispy tofu. Garnish with sliced green onions and sesame seeds.
