Preparation of Salmon

    Marinate the Salmon

    In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, minced garlic, 1 teaspoon of salt, and 1 teaspoon of black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

    Prepare the Vegetables

    While the salmon is marinating, wash and slice the zucchini and bell peppers into strips, and trim the ends of the asparagus. In a large bowl, toss the vegetables with 1 tablespoon of olive oil, 1 teaspoon of salt, and 1 teaspoon of black pepper.

Grilling

    Grill the Salmon and Vegetables

    Preheat the grill to medium-high heat. Remove the salmon from the marinade and place it on the grill. Grill for about 6-8 minutes on each side, or until the salmon flakes easily with a fork. At the same time, grill the seasoned vegetables in a grill basket or on skewers for about 5-7 minutes, or until they are tender and slightly charred.

    Serve the Dish

    Once cooked, remove the salmon and vegetables from the grill and let them rest for a couple of minutes. Serve the grilled salmon alongside the seasonal vegetables on a platter. Optionally, garnish with lemon wedges and fresh herbs.
