Base Ingredients

Method

Preparation of the Chocolate Base

  1. 1

    Melt the Chocolate

Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

  2. 2

    Separate the Eggs

Carefully separate the egg yolks from the whites. Place the yolks in a mixing bowl and the whites in a separate clean bowl.

  3. 3

    Mix Egg Yolks and Sugar

Add the granulated sugar to the egg yolks and whisk until the mixture is pale and creamy.

  4. 4

    Combine Chocolate and Egg Mixture

Slowly pour the melted chocolate into the egg yolk mixture, stirring constantly until well combined.

Whipping the Cream and Egg Whites

  1. 5

    Whip the Cream

In a separate bowl, whip the heavy cream using an electric mixer until stiff peaks form. Be careful not to overwhip.

  2. 6

    Beat the Egg Whites

Using a clean mixer bowl and beaters, whip the egg whites until soft peaks form. Gradually add a pinch of sugar and continue beating until stiff peaks form.

Combining and Chilling

  1. 7

    Fold Ingredients Together

Gently fold a third of the whipped cream into the chocolate mixture to lighten it. Then fold in the remaining whipped cream until no streaks remain. Next, gently fold in the beaten egg whites.

  2. 8

    Chill the Mousse

Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours, or until set.

Garnishing and Serving

  1. 9

    Prepare Garnishes

If desired, whip additional cream for topping and prepare chocolate shavings and fresh berries.

  2. 10

    Serve

Before serving, top each mousse with whipped cream, chocolate shavings, and fresh berries as desired.
