Preparation of the Chocolate Base

Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

Carefully separate the egg yolks from the whites. Place the yolks in a mixing bowl and the whites in a separate clean bowl.

Add the granulated sugar to the egg yolks and whisk until the mixture is pale and creamy.
