Calamari Preparation

Prepare the Calamari
Clean and slice the calamari into rings about 1/2 inch thick. Rinse under cold water and pat dry with paper towels.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. In another bowl, whisk together the egg and milk. Dip the calamari rings into the egg mixture, then dredge in the flour mixture until well coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Working in batches, fry the calamari rings for about 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Make the Sauce
Add the crushed tomatoes, dried oregano, dried basil, salt, black pepper, sugar, and red pepper flakes to the saucepan. Stir well to combine.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally.
