Prepare the Cod
Rinse the cod fillets under cold water and pat dry with paper towels.

Set up Breading Station
In three separate shallow dishes, place the flour in one, whisk together eggs and milk in the second, and combine cornmeal, salt, and pepper in the third.

Cooking the Fish

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until it shimmers.

Fry the Cod
Carefully add the breaded cod fillets to the hot oil. Cook for about 4-5 minutes per side or until golden brown and cooked through.

Drain Excess Oil
Remove the cooked fillets and place them on a paper towel-lined plate to absorb excess oil.

Prepare the Buns
Toast the burger buns lightly until golden brown.

Assemble the Sandwich
On the bottom half of each bun, place a slice of American cheese followed by a piece of fried cod. Top with romaine lettuce, sliced tomato, red onion, and pickles. Add the top half of the bun.
