Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    Combine Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, salt, and nutmeg until well combined.

    Mix Wet Ingredients

    In another bowl, beat together the vegetable oil, eggs, and vanilla extract until smooth. Stir in the grated carrots and crushed pineapple.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.

    If using, fold in the chopped walnuts and raisins gently into the batter.

Baking

    Divide the batter evenly between the prepared cake pans.

    In a mixing bowl, beat together 8 oz of cream cheese, 1/2 cup of butter, and 4 cups of powdered sugar until smooth. Stir in 2 tsp of vanilla extract.

    Frost the Cake

    Once the cakes are completely cooled, spread the cream cheese frosting evenly over the top of one cake layer, place the second layer on top, and frost the top and sides of the cake.
