Calamari Preparation

    Clean the Calamari

    Rinse the fresh calamari under cold water. Remove any insides and skin, then slice the body into rings.

    Prepare the Battering Mixture

    In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

    Prepare the Egg Wash

    In another bowl, whisk together the eggs and milk until fully combined.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Batter the Calamari

    Dip each calamari ring into the egg wash, allowing excess to drip off, then dredge in the flour mixture until fully coated.

    Fry the Calamari

    Carefully place the battered calamari rings into the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

    In a small bowl, combine the mayonnaise, ketchup, lemon juice, garlic powder, and hot sauce. Stir until smooth and well combined.
