    Prepare the Vegetables

    Start by washing and peeling the sweet and red potatoes. Then, dice them into small cubes.

    Cut the Other Vegetables

    Chop the zucchini, red bell pepper, green bell pepper, red onion, and green onion into similar-size pieces to ensure even cooking.

    Heat the Oil

    In a large skillet, heat the olive oil over medium heat until shimmering.

    Cook the Potatoes

    Add the diced sweet potatoes and red potatoes to the skillet. Season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until they start to soften and turn golden brown.

    Add the Remaining Vegetables

    Once the potatoes are golden, add the zucchini, red bell pepper, and green bell pepper to the skillet. Stir well to combine and cook for an additional 5-7 minutes until all the vegetables are tender.
