    Prepare the Potatoes

    Peel and dice the red potatoes into small cubes. Rinse them under cold water and pat dry.

    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are golden brown and tender.

    Sauté the Onions

    While the potatoes are cooking, chop the green onions and white onion. In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and sauté until they are translucent, about 3-4 minutes.

    Combine Ingredients

    Once the potatoes are cooked, add the sautéed onions to the skillet with the potatoes. Flake the smoked salmon and add it to the mixture. Stir gently to combine and cook for another 2-3 minutes to heat the salmon through.

    In a bowl, mix the sour cream with fresh dill, salt, and pepper to taste. Stir until well combined.

    In a separate pan, cook the eggs to your desired style (fried, poached, or scrambled).
