Preparation Instructions

  1. 1

    Prepare the Ingredients

Begin by finely dicing the corned beef, peeling and cubing the potatoes, and chopping the onion.

  2. 2

    Cook the Potatoes

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until they are tender and golden brown.

  3. 3

    Add the Onions

Once the potatoes are browned, add the chopped onion to the skillet. Cook for an additional 5 minutes until the onions become translucent.

  4. 4

    Incorporate the Corned Beef

Add the diced corned beef to the skillet and mix well with the potatoes and onions. Cook for about 5-7 minutes, allowing the flavors to meld and the beef to heat through.

  5. 5

    Cook the Eggs

While the hash is cooking, in a separate pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and cook them to your desired doneness (sunny side up, over easy, etc.).

  6. 6

    Serve

Once the corned beef hash is ready, serve it hot on a plate, topping it with the cooked eggs. Enjoy your delicious corned beef hash!
