    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and drain on paper towels. Once cooled, chop into small pieces.

    Prepare the Eggs

    In a bowl, crack the three eggs and whisk until well blended. Season with a pinch of salt and pepper to taste.

    Cook the Omelet

    In the same skillet with some bacon fat, pour in the egg mixture. Cook on low heat until the edges start to set. Sprinkle the chopped bacon, diced avocado, and shredded cheddar cheese over one half of the omelet. Fold the other half over the fillings and cook until the cheese melts and the eggs are fully cooked.

House-made Salsa

    Prepare the Salsa

    Dice the tomatoes and onion finely. In a bowl, combine the diced tomatoes, onion, chopped cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.

House-made Biscuit

    Make the Biscuit Dough

    Preheat the oven to 450°F (230°C). In a large bowl, mix together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

    Add Milk and Form Biscuits

    Stir in the milk until the dough comes together. Turn the dough onto a lightly floured surface and knead gently. Pat the dough to about 1-inch thickness and cut out biscuits using a biscuit cutter or glass.

    Bake the Biscuits

    Place the biscuits on a baking sheet and bake in the preheated oven for 12-15 minutes or until golden brown.
