Preparation Steps

    Prepare Taro Cream

    Peel and steam the taro root until soft. Allow it to cool, then mash it into a fine puree.

    Make the Custard

    In a saucepan, combine heavy cream, milk, and half of the granulated sugar. Heat over medium heat until it just begins to simmer. Remove from heat.

    Combine Ingredients

    In a bowl, whisk the egg yolks, remaining sugar, and vanilla extract together. Slowly pour the hot cream mixture into the egg mixture while whisking continuously to temper the eggs.

    Add Taro Puree

    Fold the taro puree into the custard mixture until smooth.

    Bake the Custards

    Preheat the oven to 150°C (300°F). Pour the custard mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water halfway up the sides of the ramekins. Bake for about 40-45 minutes, or until set.

    Cool and Chill

    Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 4 hours or overnight.

    Prepare Marshmallow Topping

    In a small bowl, microwave the marshmallows until soft and fluffy, about 20-30 seconds. Stir until smooth.

    Assemble the Dessert

    Spread the melted marshmallow on top of each chilled taro custard. Use a kitchen torch to toast the marshmallow until golden brown.

    Serve with Berries

    Top with mixed berries and drizzle with berry sauce before serving.
