Soak the Rice Noodles
In a large bowl, soak the rice noodles in hot water for 20-30 minutes or until they are soft. Drain and set aside.

Cook the Proteins
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced chicken breast and cook for about 3-4 minutes until cooked through. Add the shrimp and cook for another 2-3 minutes until they turn pink. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of oil. Add the minced garlic, julienned carrot, and sliced green onions. Stir-fry for about 2-3 minutes until the vegetables are tender.

Combine Noodles and Sauce
Add the soaked rice noodles to the skillet along with the bean sprouts. In a small bowl, mix together the fish sauce, soy sauce, brown sugar, lime juice, and Sriracha sauce. Pour the sauce over the noodles and toss everything together to coat evenly.

Add Proteins Back
Add the cooked chicken and shrimp back to the skillet. Stir-fry everything together for another 2-3 minutes until heated through.

Serve the Pad Thai hot, garnished with crushed peanuts, chopped cilantro, and lime wedges on the side.
