Cake Preparation

    Melt the Chocolate and Butter

    Preheat your oven to 200°C (400°F). In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a saucepan of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

    Mix Eggs and Sugar

    In a separate bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is pale and fluffy, about 3-5 minutes.

    Combine Mixtures

    Slowly add the melted chocolate mixture to the egg mixture, stirring continuously to combine. Add in the vanilla extract and a pinch of salt.

    Add Flour

    Sift the all-purpose flour into the mixture and gently fold until just combined. Be careful not to overmix.

    Prepare Ramekins

    Grease four ramekins with butter and dust with cocoa powder to prevent sticking. Pour the batter evenly into each ramekin, filling them about 3/4 full.

    Bake

    Place the ramekins on a baking tray and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.

    Cool and Serve

    Remove the cakes from the oven and let them cool for 1 minute. Carefully run a knife around the edges and invert onto plates. Serve immediately with scoops of vanilla ice cream on the side.
