Prepare Chicken Skewers

Marinate the Chicken
In a large bowl, combine soy sauce, coconut milk, brown sugar, minced garlic, grated ginger, lime juice, salt, and black pepper. Mix well.

Add Chicken
Cut the boneless chicken thighs into bite-sized pieces and add them to the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

Prepare Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat the grill to medium-high heat.

Skewer the Chicken
Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.

Combine Ingredients
In a small saucepan, whisk together peanut butter, coconut milk, soy sauce, lime juice, brown sugar, chili paste (if using), and water.

Heat the Sauce
Place the saucepan over medium heat and stir until the mixture is smooth and heated through, about 5 minutes. Adjust the consistency with more water if necessary.

Serve the grilled chicken skewers with the warm peanut sauce on the side for dipping.
