DESSERT
- 1
Prepare the Cake Batter
In a large mixing bowl, combine all-purpose flour, granulated sugar, baking powder, and salt. Mix well to ensure even distribution of dry ingredients.
- 2
Cream the Butter and Sugar
In another bowl, beat the unsalted butter until creamy. Gradually add the brown sugar and mix until light and fluffy.
- 3
- 4
Combine Dry and Wet Ingredients
Gradually add the dry ingredients to the wet mixture, alternating with the heavy cream. Mix until just combined; do not overmix.
- 5
Bake the Cake
Preheat your oven to 350°F (175°C). Pour the batter into a greased 9x13 inch baking dish and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- 6
Prepare the Toffee Glaze
In a small saucepan, combine the heavy cream and bourbon. Heat over medium heat until warm. Gradually stir in the remaining brown sugar until dissolved. Bring it to a gentle simmer and cook for 5-7 minutes until slightly thickened.
- 7
Assemble the Dessert
Once the cake has cooled slightly, drizzle the bourbon toffee glaze over the top. Allow it to soak in for a few minutes.
- 8
Serve
Cut the toffee cake pudding into squares. Serve warm with a scoop of vanilla ice cream and a sprinkle of candied walnuts on top.
