    Prepare the seafood

    Clean and rinse the mixed seafood thoroughly under cold running water. Remove any shells from the shrimp, and ensure that the mussels and clams are scrubbed clean.

    Preheat the oven

    Preheat your wood oven to 200°C (392°F). Ensure that the fire is burning well and that the oven is at a stable temperature.

    Chop the vegetables and herbs

    Chop the cherry tomatoes in half, mince the garlic cloves, and finely chop the fresh parsley. Set aside.

    Season the seafood

    In a large mixing bowl, combine the cleaned seafood with olive oil, minced garlic, salt, and black pepper. Toss well to coat.

    Prepare the baking dish

    In a large oven-safe baking dish, spread the seasoned seafood mixture evenly. Scatter the halved cherry tomatoes on top and squeeze the juice of the lemon over the entire dish.

    Roast in the oven

    Place the baking dish in the preheated wood oven and roast for approximately 15-20 minutes, or until the seafood is cooked through and has turned opaque.

    Once cooked, remove the dish from the oven and sprinkle the chopped parsley on top. Serve hot, ensuring to provide fresh lemon wedges on the side.
