    Prepare the Caramelized Apples

    Peel and core the apples, then slice them into thin wedges. In a large skillet over medium heat, melt the butter. Add the apples, sugar, and cinnamon. Cook for about 10 minutes, stirring occasionally until the apples are tender and caramelized. Remove from heat and set aside.

    Make the Cinnamon Mousse

    In a small bowl, sprinkle gelatin over water and let it bloom for about 5 minutes. In a saucepan, heat the heavy cream over medium heat until steaming but not boiling. Remove from heat and stir in the gelatin mixture until fully dissolved. Mix in the vanilla extract and cinnamon. Allow to cool slightly.

    Whip the Cream

    In a mixing bowl, whip the remaining heavy cream until soft peaks form. Gently fold the whipped cream into the cooled cinnamon mixture until well combined.

    Assemble the Dessert

    In serving dishes, layer the cinnamon mousse on the bottom, followed by a layer of caramelized apples. Repeat the layers until the dishes are filled. Top each dessert with a scoop of salted caramel ice cream and drizzle with additional caramel sauce if desired.
