Pomegranate-Mint Base
Muddle the mint
Place the fresh mint leaves in a medium mixing bowl or cocktail shaker. Add the light simple syrup and gently muddle the leaves 8–10 times with a muddler or the back of a spoon to release the mint oils. Don’t shred the leaves — press and twist to bruise them.
Combine juices
Add the pomegranate juice, fresh lime juice, and cold water to the bowl or shaker with the muddled mint. Stir thoroughly for 20–30 seconds (or shake briefly) so the mint-infused syrup distributes evenly.
Taste the mixture and adjust sweetness or acidity: add up to 1 tablespoon more simple syrup if you prefer sweeter, or additional lime juice (up to 1 tablespoon) if you prefer tarter. Chill the base in the refrigerator for at least 15 minutes if not serving immediately to allow flavors to meld.

Prepare glasses
Fill two tall glasses evenly with ice cubes (about 1 cup per glass total between them).
Build the drinks
Divide the chilled pomegranate-mint base evenly between the two glasses (about 1 cup each). If you want a sparkling refresher, top each glass with 1/2 cup sparkling water or club soda; otherwise leave as is for still refresher. Stir gently to combine.
Garnish and finish
Drop about 1/2 tablespoon pomegranate arils into each glass. Add a mint sprig and two lime wheels to each glass for aroma and presentation. Optionally, slap the mint sprig between your palms before placing it in the drink to release extra aroma.
Serve immediately. Leftover pomegranate-mint base can be stored in the refrigerator in a sealed container for up to 3 days; add sparkling water only when serving to maintain fizz.
