Prepare potatoes
Scrub the potatoes and cut into 1 to 1-1/2 inch chunks (leave skins on for texture). Place in a large pot and cover with cold salted water (about 1 inch above potatoes). Bring to a rolling simmer over high heat, then reduce to a medium simmer and cook until fork-tender, 12–15 minutes depending on size. Do not overcook; pieces should hold their shape.
Drain and dry
Drain potatoes in a colander and let steam-dry for 5 minutes. Transfer warm potatoes to a large bowl so they absorb dressing better.
Make dressing
In a separate bowl whisk together 4 tbs olive oil, lemon juice, white wine vinegar, honey (or pomegranate molasses), smoked paprika, ground cumin, ground coriander, ground cinnamon, Aleppo pepper (or red pepper flakes), 1.5 tsp kosher salt, 1/2 tsp black pepper, and the minced garlic until emulsified. Taste and adjust acidity or salt: add up to 1 tbs more lemon juice or 1/2 tsp more salt if needed.

Finish and rest
Drizzle remaining dressing over the combined salad if it seems dry and toss once more. Taste and adjust salt, pepper or lemon to taste. Let the salad rest at room temperature for 20–30 minutes for flavors to meld, or chill for up to 2 hours. If chilling, bring back to near room temp before serving for best flavor.
Serve
Transfer to a serving bowl and garnish with a few whole herb leaves and an extra drizzle of olive oil. This salad can be served warm, at room temperature, or chilled as part of a mezze spread.
