Rinse and measure

Quickly inspect the dried hibiscus petals and remove any stems or debris. Place petals in a fine-mesh sieve and rinse under cool running water for about 10 seconds to remove dust; shake off excess water.

Toast spices (optional)

In a small dry skillet over medium heat, toast the whole cloves, crushed cardamom pods (lightly crushed with the flat of a knife), and cinnamon stick for 30–45 seconds until fragrant. This step is optional but deepens the spice aroma.

Simmer

In a medium saucepan bring 8 cups of water to a gentle boil. Add the rinsed hibiscus petals and the toasted (or raw) spices. Reduce heat to low and simmer, uncovered, for 8–12 minutes depending on preferred strength (8 minutes for lighter, 12 for robust/tart). Stir once to ensure petals are submerged.

Steep off heat

Remove the saucepan from heat and let the hibiscus steep in the hot water for an additional 10 minutes off the heat to extract color and flavor while cooling slightly.

Strain

Strain the infusion through a fine-mesh sieve or cheesecloth into a heatproof pitcher, pressing the petals with the back of a spoon to extract liquid. Discard solids.

Sweetener & finishing

Sweeten while warm

While the tea is still warm (but not boiling), stir in 1 tablespoon granulated sugar until dissolved. If you prefer honey, stir in 1 teaspoon of honey instead or in addition. Taste and add more sweetener to preference (common range 1–3 tbs sugar for 8 cups).

Add acidity (optional)

For a brighter, balanced flavor, stir in 1 tablespoon fresh lemon juice or to taste. Lemon is optional but commonly used with karkade.

Serve warm or chilled

To serve warm: ladle into cups and garnish each with a mint leaf. To serve iced: chill the pitcher to room temperature, then refrigerate until cold (about 1 hour) or pour over a pitcher filled with 2 cups ice. Stir before serving.

Storage

Store any leftover karkade in a sealed container in the refrigerator for up to 4–5 days. Re-stir or re-sweeten slightly after chilling if flavors have concentrated.
