Prepare ginger

Peel the fresh ginger with a spoon or peeler and thinly slice it (about 1/8" thick). Measure about 6 oz by weight or a generous 1 1/4 cups loosely packed slices.

Combine ingredients

In a small saucepan combine 1 cup water, 1 cup granulated sugar, the sliced ginger, 2 tablespoons fresh lemon juice, and the optional whole cloves and peppercorns if using. Stir briefly to mix.

Simmer

Bring the mixture to a gentle boil over medium heat, stirring until the sugar dissolves. Reduce heat to low and simmer, uncovered, for 20 minutes to extract a strong ginger flavor. Lightly mash a few slices with the back of a spoon during simmering to release juices.

Steep and cool

Turn off the heat and let the syrup steep with the ginger and spices for an additional 15–30 minutes, depending on how strong you want the ginger flavor. Taste after 15 minutes.

Strain and store

Strain the cooled syrup through a fine mesh sieve or cheesecloth into a clean jar or bottle, pressing on the solids to extract as much liquid as possible. Discard solids. Refrigerate the syrup; it will keep 2–3 weeks chilled.

Ginger Ale Assembly

Chill glassware

If desired, chill glasses in the freezer for 5–10 minutes or fill with ice to cool while you prepare the drink.

Fill each serving glass with about 1/2 cup ice (adjust to preference). For each 8–oz serving, add 3 tablespoons (about 45 ml) of the prepared ginger syrup over the ice. Taste and adjust: use 2 tbsp for milder, 4 tbsp for stronger.

Top with 1 cup (8 oz) chilled club soda or sparkling water per serving. Gently stir once or twice to combine without losing too much carbonation.

Garnish each glass with a slice of lime or lemon and an optional mint sprig. Serve immediately.

To serve multiple people from batch: for a pitcher, combine 3/4 to 1 cup ginger syrup with 4 cups chilled club soda in a pitcher, stir gently, and pour over ice into glasses.
