Preparation of Salmon
- 1
Marinate the Salmon
In a small bowl, combine olive oil, lemon juice, minced garlic, fresh dill, salt, and black pepper to create the marinade. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and let them marinate in the refrigerator for at least 30 minutes.
- 2
Preheat the Oven
Preheat your oven to 400°F (200°C) while the salmon is marinating.
- 3
Bake the Salmon
Place the marinated salmon fillets on a lined baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.

Cook the Quinoa
In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
- 5
Prepare the Asparagus and Tomatoes
While the quinoa is cooking, trim the ends of the asparagus. In a separate baking dish, toss the asparagus and cherry tomatoes with a drizzle of olive oil, salt, and pepper. Place in the oven alongside the salmon for the last 10 minutes of cooking.
