Pesto Preparation

Make the Basil Pesto

In a food processor, combine the fresh basil leaves, pine nuts, and garlic cloves. Pulse until finely chopped.

Add Cheese and Oil

Add the grated Parmesan cheese, olive oil, salt, and black pepper to the food processor. Blend until smooth and creamy. Adjust seasoning if needed.

Sandwich Assembly

Prepare the Ciabatta

Slice the ciabatta loaf horizontally to create a top and bottom half.

Layer Ingredients

Spread a generous layer of blueberry chia jam on the bottom half of the ciabatta. Next, layer the sliced fresh mozzarella cheese, followed by the tomato slices, arugula, and a generous spread of basil pesto.

Finish the Sandwich

Place the top half of the ciabatta on the sandwich. Press down gently to compress the layers.

Serve with Kettle Chips

Cut the sandwich into halves or quarters and serve with a side of kettle chips.
