Method
Taquitos
Prepare the Filling
In a bowl, mix ground beef, shredded chicken, or carnitas with shredded cheese, salt, and pepper. Set aside.
Assemble the Taquitos
Warm the corn tortillas in a skillet over medium heat until pliable. Place about 2 tablespoons of the filling onto one end of each tortilla and roll tightly. Secure with a toothpick if necessary.
Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Taquitos
Carefully add the taquitos to the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Cut the Tortillas
Cut the corn tortillas into quarters to make chips.
Heat the Oil
In a separate frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Chips
Add the tortilla pieces in batches to the hot oil, frying until golden and crispy, about 2-3 minutes. Remove and drain on paper towels, then sprinkle with salt to taste.

In a bowl, combine diced tomatoes, finely chopped onion, chopped cilantro, jalapeño, lime juice, and salt. Mix well and let sit for at least 15 minutes for flavors to meld.
