Sauté the Aromatics
In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until vegetables are softened. Add the minced garlic and sauté for another minute until fragrant.

Add the Broth
Pour in the vegetable or chicken broth and bring to a boil. Once boiling, reduce the heat to a simmer.

Add Vegetables
Add the cubed potatoes, chopped green beans, diced tomatoes, and fresh spinach to the pot. Stir to combine.

Season the Soup
Add the bay leaves, dried thyme, salt, and pepper to the soup. Stir well and let the soup simmer for about 20-30 minutes, or until the vegetables are tender.

Add Optional Ingredients
If using, stir in the shredded cooked chicken for added protein and let simmer for an additional 5 minutes.

Serve
Remove the bay leaves from the soup. Ladle the soup into bowls and sprinkle with grated Parmesan cheese if desired. Serve hot.
