Tofu Preparation

Marinate the Tofu
Press the tofu to remove excess moisture. Cut into 1-inch cubes. In a large bowl, combine tamari, sesame oil, grated ginger, and minced garlic. Add the tofu cubes and gently toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes.

Bake the Tofu
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Spread the marinated tofu cubes on the sheet in a single layer and sprinkle with sesame seeds. Bake for 25-30 minutes or until golden and crispy, flipping halfway through.

Make the Sauce
In a small bowl, whisk together tamari, sesame oil, maple syrup, and rice vinegar until well combined. Stir in toasted sesame seeds. Set aside to let the flavors meld.

Serve the Dish
On a large serving platter, create a bed of the rice and quinoa blend. Top with the baked sesame-glazed tofu. Serve the sesame tamari sauce on the side for drizzling.
