Method
Prepare the Salmon
- 1
Season and Cook the Salmon
Preheat your grill or skillet over medium-high heat. Season the salmon fillets with salt and black pepper. Cook the salmon for about 4-5 minutes on each side, or until fully cooked and flaky. Remove from heat and let it rest for a few minutes before flaking it into bite-sized pieces.
Make the Croutons
- 2
Prepare Ciabatta Croutons
Preheat the oven to 375°F (190°C). In a bowl, toss the cubed ciabatta bread with olive oil, garlic powder, salt, and black pepper. Spread the bread cubes on a baking sheet and bake for 10-12 minutes, or until golden brown and crispy. Remove from the oven and let cool.
Assemble the Salad
- 3
Combine Salad Ingredients
In a large salad bowl, combine the romaine lettuce, chopped kale, halved cherry tomatoes, sliced cucumber, and flaked salmon. Toss gently to mix the ingredients.
- 4
Add Cheese and Croutons
Sprinkle the shaved Grana Padano cheese over the salad and add the homemade ciabatta croutons. Drizzle with Caesar dressing to taste.
- 5
Toss and Serve
Gently toss the salad to combine all ingredients and ensure they are evenly coated with the dressing. Serve immediately.
