Roasted Garlic Mashed Potato - Half Pan Recipe
Serves up to 10. Sometimes, you just need some really good mashed potatoes! Ours are made with potatoes mashed with roasted garlic, real butter, cream and green onions.

Method
Prepare the Potatoes

Peel and Cut Potatoes
Peel the Russet potatoes and cut them into evenly sized chunks, about 1-2 inches each for even cooking.

Boil the Potatoes
Place the potato chunks in a large pot and cover them with cold water. Add 1 tablespoon of salt to the water. Bring to a boil over medium-high heat, then reduce the heat to medium and let simmer until the potatoes are tender, about 15-20 minutes.
Roast the Garlic

Prepare the Garlic
Preheat your oven to 400°F (200°C). Slice the tops off the garlic bulbs to expose the cloves.

Roast the Garlic
Drizzle the exposed garlic cloves with olive oil and wrap them in aluminum foil. Place in the oven and roast for 30-35 minutes until the cloves are soft and caramelized.

Cool and Squeeze Garlic
Remove the garlic from the oven and let it cool slightly. Once cool enough to handle, squeeze the roasted garlic cloves out of their skins into a bowl.
Mash the Potatoes

Add Ingredients
Add the roasted garlic, unsalted butter, heavy cream, and chopped green onions to the pot with the drained potatoes.

Season the Mashed Potatoes
Season with black pepper and additional salt to taste, mixing well to incorporate.
Serve

Transfer to Serving Dish
Transfer the mashed potatoes to a half pan or large serving dish, and garnish with extra green onions if desired.
