Waffle Batter

    Prepare the Yeast

    In a small bowl, warm the milk until it is lukewarm (about 110°F). Sprinkle the active dry yeast over the milk and let it sit for about 5-10 minutes until it becomes frothy.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour and granulated sugar until well combined.

    Combine Wet Ingredients

    In another bowl, beat the eggs and add the vanilla extract. Once the yeast mixture is frothy, combine it with the egg mixture and melted butter.

    Combine Both Mixtures

    Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix. Gently fold in the pearl sugar.

    Let the Batter Rise

    Cover the bowl with a clean kitchen towel and let the batter rise in a warm place for about 1 hour or until it has doubled in size.

    Cook the Blueberries

    In a saucepan over medium heat, add the blueberries and cook until they start to break down, about 5-7 minutes.

    Stir in the chia seeds, honey (or maple syrup), and lemon juice. Continue to cook for another 5 minutes, stirring frequently, until the mixture thickens.

    Remove from heat and allow to cool before transferring to a jar. The jam will thicken further as it cools.

Cooking the Waffles
