Steak Preparation

Marinate the Steak
In a bowl, mix together minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper. Rub this mixture all over the flank steak and marinate for at least 30 minutes, or up to overnight in the refrigerator.

Cabbage Slaw Preparation

Prepare the Slaw
In a large bowl, combine the shredded cabbage, grated carrot, fresh lime juice, olive oil, and salt. Toss well to combine and stir in chopped cilantro. Set aside to let flavors meld.
Avocado Tomatillo Salsa Preparation

Make the Salsa
In a bowl, combine diced avocado, chopped tomatillos, minced jalapeño, fresh lime juice, and salt. Mash gently with a fork to combine, leaving some chunks for texture.
Chipotle Aioli Preparation

Prepare the Aioli
In a small bowl, whisk together mayonnaise, minced chipotle in adobo sauce, minced garlic, and fresh lime juice until smooth and well combined.
Assembly

Assemble the Sandwich
Slice the ciabatta rolls in half. Spread a generous amount of chipotle aioli on the bottom half. Layer with sliced steak, cabbage slaw, and avocado tomatillo salsa. Sprinkle crumbled cotija cheese on top, then garnish with fresh cilantro. Place the top half of the ciabatta roll on each sandwich.
