Chicken Preparation

Marinate Chicken
In a bowl, combine olive oil, Aleppo pepper, salt, and black pepper. Add chicken thighs and coat well. Let marinate for at least 30 minutes.

Roast Cherry Tomatoes
Preheat the oven to 400°F (200°C). Place cherry tomatoes on a baking sheet and drizzle with olive oil. Roast for about 15-20 minutes until they are soft and slightly caramelized.

Prepare Mozzarella and Basil
Slice fresh mozzarella into thick rounds. Wash and pat dry fresh basil leaves.

Make Lemon Zaatar Aioli
In a bowl, mix mayonnaise, lemon juice, and zaatar spice. Stir until well combined and set aside.

Assemble the Stack
Slice ciabatta bread in half. Spread a layer of basil pesto on the bottom half. Layer with sliced blackened chicken, fresh mozzarella, roasted cherry tomatoes, and fresh basil leaves. Drizzle with lemon zaatar aioli and top with the other half of the ciabatta.

Cut the ciabatta stack in half and serve immediately, enjoying the blend of flavors.
