Prepare the Sweet Potatoes
Preheat your oven to 400°F (200°C). Peel and cut the sweet potatoes into cubes. Toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes or until tender and golden.

Cooking the Chicken

Season the Chicken Thighs
In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Rub this spice mix all over the chicken thighs.

Blacken the Chicken
Heat a cast-iron skillet over medium-high heat. Add a little oil and when hot, add the seasoned chicken thighs. Cook for 5-7 minutes on each side until they are blackened and cooked through. Ensure the internal temperature reaches 165°F (75°C).

Combine and Serve
On a plate, place a scoop of quinoa and rice mixture, then top with blackened chicken thighs. Add roasted sweet potatoes, organic black beans, and kale. Spoon over the mango salsa and drizzle with BBQ sauce. Garnish with sliced scallions and a wedge of fresh lime.
