    Prepare the Potatoes

    Wash and scrub the potatoes thoroughly. Slice them into thin rounds, approximately 1/8 inch thick, using a mandoline slicer or a sharp knife.

    Soak the Potato Slices

    Place the sliced potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. This helps in achieving extra crispy chips.

Frying

    Heat the Oil

    In a deep frying pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for accuracy.

    Dry the Potatoes

    Once the potatoes have soaked, drain the water and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes

    Carefully add a handful of potato slices to the hot oil. Fry them in small batches to avoid overcrowding. Fry for 3-4 minutes or until golden brown and crispy.

    Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with sea salt immediately while they are still hot.
