    Wash and scrub the Russet potatoes thoroughly under cold water. Pat them dry with a clean towel.

    Slice the Potatoes

    Using a sharp knife or a mandoline slicer, slice the potatoes into 1/8 inch thick rounds. Ensure the slices are uniform for even cooking.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to monitor the temperature.

    Carefully add a handful of potato slices to the hot oil, being careful not to overcrowd the pot. Fry for about 3-4 minutes or until the chips are golden brown and crispy. Stir occasionally to ensure even cooking.

    Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.
