Prepare the Potatoes
Wash and scrub the Russet potatoes thoroughly under cold water. Pat them dry with a clean towel.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to monitor the temperature.

Fry the Potato Slices
Carefully add a handful of potato slices to the hot oil, being careful not to overcrowd the pot. Fry for about 3-4 minutes or until the chips are golden brown and crispy. Stir occasionally to ensure even cooking.

Drain the Chips
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.

Season the Chips
While the chips are still hot, sprinkle sea salt over them to taste. Toss gently to ensure even distribution of salt.

Allow the kettle chips to cool for a few minutes before serving. Enjoy them fresh or store them in an airtight container.
