Wash the Pink Lady apples thoroughly under running water. Cut them into quarters, removing the seeds and core, but leaving the skin on for extra flavor.

In a blender, add the apple quarters and half of the water. Blend until smooth. Strain the mixture through a fine mesh sieve or cheesecloth into a bowl to extract the juice, pushing down with a spatula to get as much liquid as possible.

Sprinkle the yeast over the juice mixture and stir gently to combine. If using, add the cinnamon stick and vanilla extract at this stage.

Cover the pot with a clean kitchen towel or cheesecloth to allow air flow while keeping contaminants out. Let it sit at room temperature for about 24-48 hours. You may notice bubbles forming, which indicates fermentation is happening.

Let the bottled beverage sit at room temperature for another 3-5 days to allow carbonation to develop. Check the bottles daily for pressure by gently squeezing them; they should feel firm but not overly hard.
