Roast the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breast with salt and pepper. Place it on a baking sheet and roast for 25-30 minutes or until fully cooked. Let it cool, then shred the chicken.

Prepare the Tomatillos and Chilis
If using fresh tomatillos and chilis, roast them in the oven or on a grill until charred, about 15-20 minutes. Allow to cool, then chop them into small pieces.

Sauté the Base
In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

Combine Ingredients
Stir in the roasted tomatillos, green chilis, shredded chicken, hominy, chicken broth, cumin, oregano, salt, and black pepper. Bring the mixture to a boil.

Simmer
Reduce heat to low and let the chili simmer for 20-25 minutes, allowing the flavors to meld together.
