Main Ingredients

Method

Preparation

  1. 1

    Roast the Garlic

Preheat your oven to 400°F (200°C). Take the garlic cloves and cut off the top 1/4 inch of the heads. Drizzle with olive oil and wrap in foil. Roast for about 30-35 minutes, until the cloves are soft and caramelized. Let cool, then squeeze the roasted garlic out of the skins and set aside.

  2. 2

    Prepare the Potatoes

Peel the Russet potatoes and cut them into quarters. Place the potatoes in a large pot and cover with cold water. Add 1 teaspoon of salt to the water.

  3. 3

    Cook the Potatoes

Bring the pot of potatoes to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.

Combining Ingredients

  1. 4

    Mash the Potatoes

Once the potatoes are cooked, drain them well and return them to the pot. Add the roasted garlic, unsalted butter, and heavy cream to the potatoes.

  2. 5

    Mix and Season

Using a potato masher or a hand mixer, mash the potatoes until smooth and creamy. Add salt and black pepper to taste. Mix well to combine all the ingredients.

  3. 6

    Garnish with Green Onions

Chop the green onions finely and fold them into the mashed potatoes, reserving a small amount for garnishing if desired.
