Roast the Garlic
Preheat your oven to 400°F (200°C). Take the garlic cloves and cut off the top 1/4 inch of the heads. Drizzle with olive oil and wrap in foil. Roast for about 30-35 minutes, until the cloves are soft and caramelized. Let cool, then squeeze the roasted garlic out of the skins and set aside.

Combining Ingredients

Mash the Potatoes
Once the potatoes are cooked, drain them well and return them to the pot. Add the roasted garlic, unsalted butter, and heavy cream to the potatoes.

Mix and Season
Using a potato masher or a hand mixer, mash the potatoes until smooth and creamy. Add salt and black pepper to taste. Mix well to combine all the ingredients.

Garnish with Green Onions
Chop the green onions finely and fold them into the mashed potatoes, reserving a small amount for garnishing if desired.
