Preparation
- 1
Wash and Prepare Greens
Thoroughly wash the Romaine Lettuce, Spinach, and Arugula under cold running water. Pat dry with a clean towel or use a salad spinner to remove excess water. Tear the Romaine and Spinach into bite-sized pieces.
- 2
Chop Vegetables
Slice the Cherry Tomatoes in half. Peel the Cucumber and cut it into thin rounds or half-moons. Thinly slice the Red Onion. Core and chop the Bell Pepper into bite-sized pieces.
- 3
Cook Protein (if using chicken)
If using grilled chicken, ensure it is cooked through and sliced into strips. If using canned chickpeas, drain and rinse them under cold water.
Assembling the Salad
- 4
Mix Greens
In a large salad bowl, combine the prepared Romaine Lettuce, Spinach, and Arugula. Toss gently to mix the greens evenly.
- 5
Add Vegetables
Add the chopped Cherry Tomatoes, Cucumber, Red Onion, and Bell Pepper to the bowl with the greens. Toss gently to combine.
- 6
Incorporate Proteins
Add the grilled chicken, chickpeas, and feta cheese to the salad. Gently mix to ensure everything is evenly distributed.
- 7
Prepare Dressing
In a small bowl, whisk together the Olive Oil, Balsamic Vinegar, Honey, Dijon Mustard, Salt, and Black Pepper to taste.
- 8
Dress the Salad
Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
- 9
Add Toppings
Slice the Avocado and add it on top of the salad. Sprinkle with Sunflower Seeds and Dried Cranberries for added crunch and sweetness.
