Steak Preparation

Marinate the Steak
In a bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper. Rub the mixture all over the flank steak and let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

Cabbage Slaw Preparation

Make the Slaw
In a large bowl, combine shredded cabbage, grated carrot, chopped cilantro, lime juice, olive oil, and salt. Toss until well combined and let it sit for about 10 minutes to allow the flavors to meld.
Avocado Tomatillo Salsa Preparation

Prepare the Salsa
In a medium bowl, mix together diced avocado, chopped tomatillos, chopped cilantro, lime juice, and salt. Gently fold to combine and set aside.
Chipotle Aioli Preparation

Make the Aioli
In a small bowl, combine mayonnaise, minced chipotle, and lime juice. Stir until smooth and well blended.
Assembly

Assemble the Sandwiches
Slice the ciabatta rolls in half. Spread a generous amount of chipotle aioli on the bottom half, followed by sliced steak, cabbage slaw, crumbled cotija cheese, and a spoonful of avocado tomatillo salsa. Close the sandwich and serve immediately.
