Chicken Preparation

    Season and Cook Chicken

    Rub the chicken thighs with olive oil and blackening seasoning. Heat a skillet over medium-high heat and cook the chicken for about 5-7 minutes on each side until cooked through and blackened. Use a meat thermometer to ensure an internal temperature of 165°F (75°C). Remove from heat and let rest.

Pickling Vegetables

    Make Pickled Carrots and Cucumber

    Julienne the carrot and cucumber. In a bowl, combine rice vinegar, sugar, and salt until dissolved. Add the julienned vegetables and let them marinate for at least 30 minutes.

Prepare Lemongrass Aioli

    Mix Aioli

    In a bowl, mix mayonnaise, finely chopped lemongrass, and lime juice until well combined. Adjust seasoning if necessary.

Assemble Sandwich

    Build Your Banh Mi

    Slice the ciabatta bread rolls in half. Spread a generous amount of lemongrass aioli on the bottom half. Layer the cooked blackened chicken, pickled carrots and cucumber, fresh cilantro, basil, and slices of fresh jalapeño. Close the sandwich and serve with a side of kettle chips.
