Method

Chicken Marinade

  1. 1

    Prepare the Marinade

In a bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, black pepper, salt, and olive oil to create a marinade.

  2. 2

    Marinate Chicken

Coat the chicken thighs in the marinade, ensuring they are well-covered. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

  3. 3

    Cook Chicken

Heat a skillet over high heat. Once hot, add the marinated chicken thighs and cook for about 5-7 minutes on each side or until fully cooked and blackened. Remove from heat and let rest.

Pickled Carrots

  1. 4

    Prepare Carrots

Peel and cut the carrots into thin julienne strips.

  2. 5

    Make Pickling Liquid

In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, stirring until the sugar dissolves.

  3. 6

    Pickle Carrots

Place the julienned carrots in a jar and pour the hot pickling liquid over them. Let cool to room temperature, then refrigerate for at least 30 minutes before using.

Lemongrass Aioli

  1. 7

    Prepare Lemongrass

Finely chop the tender part of the lemongrass stalk and mince the garlic cloves.

  2. 8

    Make Aioli

In a bowl, combine mayonnaise, chopped lemongrass, minced garlic, lime juice, and salt. Mix well until smooth and creamy. Adjust seasoning to taste.

Assembly

  1. 9

    Toast Ciabatta

Slice the ciabatta bread in half and toast lightly until golden brown.

  2. 10

    Assemble Sandwich

Spread a generous amount of lemongrass aioli on the bottom half of each ciabatta. Layer with blackened chicken, pickled carrots, cilantro, basil, and jalapeño slices. Top with the other half of the ciabatta.

  3. 11

    Serve

Slice the sandwiches in half and serve immediately, enjoying the fusion of flavors.
