Marinade Preparation

    Make the Marinade

    In a medium bowl, whisk together olive oil, chopped rosemary, chopped thyme, minced garlic, salt, black pepper, and lemon juice until combined.

    Marinate the Chicken

    Place the whole chicken in a large resealable plastic bag and pour the marinade over it. Seal the bag and massage the marinade into the chicken. Refrigerate for at least 2 hours, preferably overnight.

Cooking the Chicken

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Roast the Chicken

    Remove the chicken from the marinade and place it in a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

Assembling the BBQ

    Add BBQ Sauce

    In the last 15 minutes of roasting, brush the smoky BBQ sauce over the chicken to glaze it.

    Prepare Toppings

    While the chicken is roasting, slice the red onion, chop the green onion, and cilantro, and slice the jalapeño. Set aside.

    Shred the Chicken

    Once the chicken is cooked, remove it from the oven and let it rest for 10 minutes. Then shred the chicken using two forks.

    Serve

    On a large serving platter, arrange the shredded chicken and top it with the sliced red onion, chopped green onion, cilantro, jalapeño slices, and shredded mozzarella. Drizzle with additional BBQ sauce if desired.
