Salad Preparation

Prepare the Arugula
Wash the arugula thoroughly under cold water. Drain and pat dry with paper towels.

Prepare the Goat Cheese
Crumble the goat cheese into small pieces using your hands or a fork.

Prepare the Blueberries
Rinse the fresh blueberries under cold water and drain well.

Combine Salad Ingredients
In a large serving bowl, combine the arugula, crumbled goat cheese, and fresh blueberries. Toss gently to mix.
Citrus Vinaigrette Preparation

Combine Vinaigrette Ingredients
In a small bowl, whisk together the olive oil, fresh lemon juice, honey, Dijon mustard, salt, and black pepper until well combined.

Serve the salad immediately with the citrus vinaigrette on the side for drizzling just before eating.
