Steak Preparation

Marinate the Steak
In a bowl, mix minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper. Add the steak pieces and coat them well with the marinade. Cover and let marinate in the refrigerator for at least 1 hour, preferably overnight.

Roast Cauliflower
Preheat the oven to 400°F (200°C). In a large bowl, toss the cauliflower florets with turmeric powder, olive oil, and salt. Spread on a baking sheet and roast for 20-25 minutes, or until golden and tender.
Roasted Cherry Tomatoes Preparation

Roast Cherry Tomatoes
On a separate baking sheet, toss cherry tomatoes with olive oil and salt. Roast in the oven for 15-20 minutes until blistered and soft.
Salad Assembly

Assemble the Salad
In a large bowl, combine mixed greens, pickled onion, and roasted cherry tomatoes. Toss gently. Serve with crumbled cotija cheese, a sprinkle of crushed Aleppo pepper, and drizzle with scallion ranch dressing.
