Steak Preparation

    Marinate the Steak

    In a bowl, mix minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper. Add the steak pieces and coat them well with the marinade. Cover and let marinate in the refrigerator for at least 1 hour, preferably overnight.

    Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and grill each side for about 4-6 minutes for medium-rare, or to your desired doneness. Let rest for 5 minutes before slicing.

Rice and Quinoa Cooking

    Rinse the quinoa and rice under cold water. In a medium pot, combine the quinoa, rice, and water. Bring to a boil, then reduce the heat to low and cover. Cook for about 15 minutes or until the grains are tender and the water is absorbed. Fluff with a fork.

Turmeric Cauliflower Preparation

    Preheat the oven to 400°F (200°C). In a large bowl, toss the cauliflower florets with turmeric powder, olive oil, and salt. Spread on a baking sheet and roast for 20-25 minutes, or until golden and tender.

    On a separate baking sheet, toss cherry tomatoes with olive oil and salt. Roast in the oven for 15-20 minutes until blistered and soft.

Salad Assembly

    In a large bowl, combine mixed greens, pickled onion, and roasted cherry tomatoes. Toss gently. Serve with crumbled cotija cheese, a sprinkle of crushed Aleppo pepper, and drizzle with scallion ranch dressing.
