    Prepare the Chicken

    Cut the chicken breasts into bite-sized pieces and marinate with soy sauce, cornstarch, and a teaspoon of sesame oil for about 15 minutes.

    Chop the Vegetables

    Dice the bell pepper and zucchini into small pieces. Chop the green onions, separating the white and green parts.

    Stir-Fry

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add more oil if necessary. Add the minced ginger, garlic, and dried chili peppers. Stir-fry for about 30 seconds until fragrant. Then, add the bell pepper, zucchini, and white parts of the green onions. Stir-fry for another 3-4 minutes.

    Combine

    Return the cooked chicken to the skillet. Add the peanuts, rice vinegar, and the remaining soy sauce and sesame oil. Stir everything together and cook for an additional 2-3 minutes until heated through.

    Garnish with the green parts of the green onions and serve hot with steamed rice.
