In a large bowl, whisk together the flour and salt. Create a well in the center and gradually pour in the water, mixing with a fork or your fingers until a shaggy dough forms.

Knead the dough on a lightly floured surface for about 8–10 minutes until smooth and elastic. If the dough is too dry, add a few teaspoons of water; if too sticky, dust with a little more flour.

Wrap the dough in plastic and let rest for 30 minutes at room temperature to relax the gluten.

Roll out the dough on a lightly floured surface to a very thin sheet (about 1/16 inch / 1.6 mm). Slice into long noodles of desired width (e.g., 1/4 inch / 6 mm for fettuccine or 1/8 inch / 3 mm for thin noodles). Dust with a little flour to prevent sticking.

Cook noodles in a large pot of salted boiling water for 2–4 minutes until al dente if fresh, or 6–8 minutes if dried. Drain and rinse briefly with warm water if desired to remove excess starch.
