Prep and flavor base
Season the chicken pieces with a pinch of salt and pepper. In a small bowl, whisk together 1 tablespoon soy sauce, minced garlic, and grated ginger. Toss the chicken with this mixture and let marinate for 10-15 minutes while you prepare the vegetables.

Bring a large pot of salted water to a boil for the noodles. Cook noodles according to package instructions until just al dente, then drain and rinse lightly with warm water to stop cooking. Set aside.

In a small bowl, whisk 2 tablespoons soy sauce with 1 tablespoon cornstarch and 1/4 cup chicken broth to make a slurry. Set aside.

Heat 1 teaspoon sesame oil in a large skillet or wok over medium-high heat. Add the marinated chicken and sear until cooked through and lightly browned, about 4-5 minutes. Remove chicken to a plate.

Add another teaspoon sesame oil to the pan. Sauté the carrot and optional peas for 2-3 minutes until just tender-crisp. Add green onions and cook for 1 minute more.

Pour in the remaining chicken broth (3-3.5 cups if using a standard 4-cup measurement, adjust as needed) and bring to a simmer. Stir in the slurry and cook until slightly thickened, about 1-2 minutes.

Return the chicken to the pan along with the cooked noodles. Toss to coat in the sauce and heat through, 1-2 minutes. Taste and adjust salt and pepper as needed.
