Broth Preparation

Combine Broth Ingredients
In a large pot, combine the soy sauce, vegetable broth, water, and ground onion. Stir well to mix the ingredients.

Heat the Broth
Place the pot over medium heat and bring the mixture to a gentle simmer. Allow it to cook for about 10 minutes to enhance the flavors.

Prepare the Vegetables
While the broth is simmering, chop the cabbage into thin strips, peel and julienne the carrot, and slice the green onions. Set aside.

Cook the Vegetables
Add the chopped cabbage, julienned carrot, corn, and choy sum to the broth. Let it cook for an additional 5-7 minutes until the vegetables are tender.

Cook the Ramen Noodles
In a separate pot, cook the ramen noodles according to the package instructions. Typically, this will take about 3-4 minutes.

Drain and Rinse
Once cooked, drain the noodles and rinse them under cold water to stop the cooking process. Set aside.
Assembly

Combine and Serve
In serving bowls, place a portion of the cooked ramen noodles. Ladle the hot vegetable broth and vegetables over the noodles. Garnish with sliced green onions.
